Charlotte at The Great Big Vegetable Challenge has worked her way through the vegetable alphabet and is now at Q. I've racked my brain, and am sure she has hers, and I can't think of a vegetable that begins with Q. Charlotte's creative solution is to make Q a "quick" category and all the recipes should be vegetable dishes that can be prepared in about ten minutes.
Balsamic Glazed Carrots
1 pound "baby" carrots (these come precut and peeled)
1/4 cup butter (4 tbs.)
1/4 cup balsamic vinegar
1/4 cup honey
parsley for garnish (optional)
Steam carrots for about 8-10 minutes. In a small saucepan, melt butter and mix with the honey and balsamic vinegar, mix and heat on low. When the carrots are steamed, place them in a serving bowl and pour the glaze over the top. Toss to coat.

I guess Quinoa isn't a vegetable? It is a plant!
I think it's a grain. But much better than I came up with!
Maybe quince can be vegetable for a day. Or maybe fruit+grain=vegetable, and you could do a quince-quinoa dish.
Hmmm, you could cheat and do Vegetable Quiche, too!
